If you can’t taste where it comes from, what’s the point?

We believe the best tequila starts with knowing what to leave untouched throughout the process. It’s about preserving what’s already there: its aromas, its flavors, and the character of the land where it was grown.
Every decision we make is meant to carry that origin all the way to the bottle.

Character born of the land

The son of farmers and an agave grower for more than five decades, Álvaro Montes learned a truth in the fields that still guides everything he does: the land cannot be rushed, and neither can quality.
For Don Álvaro, the quality of a tequila begins long before the ovens are lit: with the choice of each plant and the years spent tending it.
His journey took shape the same way: harvest by harvest, bottle by bottle. Through hard work, knocking on doors, and forging his way on both sides of the border, he built a path of his own. His journey was not inherited. It was built.
...
And so Almonte was born: from his name, his experience, and a passion that knows no shortcuts.
Almonte is a lifetime devoted to the land, transformed into a legacy.

Before the tequila, there was Amatitán

Between the slopes of the volcano and the depths of the canyon stretches a blue landscape that has shaped generations. Here, agave is more than a crop: it is history, livelihood, and a way of seeing the world.
Long before it crossed borders, the people here already knew the secrets of agave.
In Amatitán, tradition does not belong to the past. It lives on in the fields that shape the horizon, in the skilled hands of agave growers, and in the stories still told along the town’s streets.
Almonte comes from this place and carries its story forward. Every bottle holds something of its origin: the warm earth, the passing years, the work of skilled hands, and the spirit of a town where agave is history and tequila is part of life.
...
Almonte could not come from just anywhere. It had to be born here.

Letting Time Grow

Years before the bottle, the soil is prepared and brought into balance. Only the finest agave shoots are planted: the healthiest, bluest, and strongest. Each is chosen for what it will one day become.
For the four years before harvest, the fields are kept free of synthetic herbicides, insecticides, and fungicides. The soil is nourished with organic matter, compost, and worm castings. Weeds are removed by hand, and every agave is closely tended as it grows naturally. This is what organic means.
All our agaves share one land, one origin, and one philosophy of care. From planting to harvest, every decision is overseen by Álvaro Montes. No blending of origins. No losing the story of what was grown. This is Single Estate.

Organic. Proven in practice.

Before becoming Almonte, our agaves are tested in a laboratory for more than 200 possible residues. Only plants that pass this analysis continue their journey.
Caring for the fields is where making tequila truly begins. Being organic is more than following a trend. It means six years of work.

Where the land becomes tequila

After years beneath the Amatitán sun, the agave arrives at La Roca. Álvaro Montes envisioned this distillery from the ground up and designed every step of each agave heart’s journey to honor what the land took so long to create.
The agave cooks slowly in masonry ovens. Milling releases its juices; fermentation follows its own rhythm; a second distillation in copper completes its character.
Álvaro knows the value of patience and tends every stage with the care of someone who was there at the beginning, in the fields. At La Roca, his experience as a grower and master tequilero come together.
...
The agave he watched grow becomes Almonte: an expression of the land, the craft, and all the time devoted to doing things right.
